White Chocolate Cran Orange Macadamia Nut Cookies- part two (success!!)


I need to come up with a better name for these cookies.

After the orange oil fiasco, I tried again, this time with fresh orange oil (if I hadn't already bought that and felt like I needed to use it up before it goes bad, I would have tried Jill's suggestion to use orange jest.) Should anyone that lives by me want to try this recipe, please feel free to borrow my orange oil. My goal is to use it all up before it goes bad. While I was at the store, I grabbed a bag of macadamia nuts on a whim to add to the mix. I have to say, I loved the nuts in the cookie. So much so I changed the name of the cookies and added two more words, cause the name just wasn't long enough.

The kids weren't so much in love with the cookies, I guess nobody's perfect. "Fruit and nuts in a cookie? What are you thinking, mom?"

White Chocolate Cran Orange Macadamia Nut Cookies

1 cup shortening
1/2 cup butter
1 1/3 cup sugar
1 cup brown sugar
4 eggs
1 tsp. vanilla
1 tsp. orange oil
2 tsp. soda
1 1/2 tsp. salt
2 1/2 cups oats
3 2/3- 3 3/4 cups flour
1+ cup white chocolate chips
1 cup craisins
1 cup coarsely chopped macadamia nuts.

Preheat oven to 350 degrees F
Beat first 4 ingredients together about 5 minutes. Add eggs one at a time. Beat well after each egg. Add vanilla and orange oil. Stir together soda, salt, flour, and oats. Add to creamed mixture. Stir in chocolate chips, Craisins, and nuts. (These last three ingredients really depend on your preference, I just throw stuff in until it looks good to me). Drop by spoonfuls on ungreased cookie sheet. Bake 10-12 minutes.
