These are my all-time very favorite chocolate chip cookies. These are the chocolate chip cookies that I grew up on. They are chewy and yummy and the presence of oats in them makes me feel good about eating them for breakfast. (in addition to mid-afternoon snacks, evening dessert, etc.) Or at least not so guilty. I reason that the goodness of the oats totally neutralizes any of the bad stuff. In October I like to drizzle orange colored melting candies over the top, cause the orange stripes with the chocolate chips look good together, I think anyway. And just because two craft stores where out of the orange colored candies didn't stop me from just buying red and yellow and doing it that way, cause dang it, I only get to do it in October. I suppose I could do it any other month, but it just wouldn't be the same.
Chocolate Chip Cookies At Their Best
1 c. shortening
1/2 c. butter
1 1/3 c. sugar
1 c. brown sugar
4 eggs (add one at a time, beat well)
1 tsp. vanilla
1 tsp. lemon juice
2 tsp. soda
1 1/2 tsp. salt
1+ tsp. cinnamon
3 2/3- 3 3/4 cups, about 1 lb. 4.25 oz flour
2 1/2 c. oats
2 12 oz bags chocolate chips.
Beat first 4 ingredients about 5 minutes. Add eggs, one at a time, beating well after each. Add lemon juice and vanilla. Stir together soda, salt, cinnamon, flour, and oats. Add to creamed mixture. Stir in chocolate chips. Bake at 350 for 10-12 minutes.
