Dad's pancakes

Awhile ago a tragedy occurred in our home on one Saturday morning (aka "Pancake Day") We actually ran out of Bisquick. We always have tons of it, and so we assumed we had a box or four stashed up in the pantry behind all the cereal. None such luck.

We had a choice to make- skip pancake day, or make the batter from scratch. Since the first option wasn't really an option, John did what he does best, bypassed all my cookbooks and ran straight to the Internet.

He found some random recipe for pancakes from what site I have no idea, decided to give it a try, and it was a total success. The kids loved it. They asked him to make that recipe every single week. Who knew that a recipe made from scratch would taste better than something out of a box? What a novel concept.

(obviously this recipe is easily halved- we just eat a lot of pancakes)

Dad's Pancakes

3 cups flour
2 Tbs + 1 tsp baking powder
2 teaspoons salt
2 Tbs white sugar
2 1/2 cups milk
2 eggs
1/4 cup + 2 Tbs butter, melted
1 tsp vanilla

Mix all ingredients together with hand mixer then cook on griddle.

(John wasn't feeling well last "pancake day" so as the healthiest man of the house, Nick stepped up to the bat and made breakfast for us all yesterday- that picture is a stack of his pancakes)
