Soooo, I made little cups of chocolate covered raspberries.
The trick is to stick about three in a cup, and I use my mini-muffin tin to support the cups, and you put them in there with the holes facing up, so you can fill the cavity with chocolate. Then refrigerate.
I use Dove, cause it melts better. I use my double boiler, but I am sure a microwave works just fine. And I prefer dark chocolate with my raspberries.
My only problem now is that because I saved out some of the raspberries to be eaten plain. I like them on my cereal, and I need a whole little carton for that, and John called and said he was coming home early, and he would be upset to find out that every raspberry in the house was coated in chocolate. So now I STILL have too much chocolate left over! Which wouldn't be so bad but it has hardened in my double boiler. So I have to use it or throw it out. I suppose I could just sacrifice myself and melt it enough to eat it straight with a spoon, cause it's dark chocolate, and I am the only one in the house who likes dark chocolate, or I could go back to Costco, look for more raspberries, but then what on Earth would I do with all those little cups of chocolate covered raspberries!?!? Decisions, decisions.
