Mindy's Potato Salad


When we first moved down here to Arizona we were lucky enough to move into a great neighborhood and make a lot of great friends. Many of them I hope will be friends for life. Mindy and her family are those kind of friends. We lived across the street from each other for four years before each going our separate ways. We only moved a couple of miles down the road, but they moved out of the state back to the town where she grew up. Fortunately for us, that is not the end of the story. They are able to come down and visit us at least once a year, we visit there when we can, and we are always discussing possible trips we should take together.

Mindy and her family have loads of other friends down here as well, we just happen to be the lucky ones they stay with, but whenever they do come down, it is almost a certainty there will be at least one barbecue or get together of some kind with several families from "the old neighborhood". The other given is that Mindy will make her potato salad. This is her recipe, and the only one her husband will eat, and we all love it too. She admits to wishing she could jazz it up a bit by adding celery, pickles, onions, or even crumbled bacon, but won't because she knows her husband prefers it without any of that.

The ingredients are just approximations- she just adds stuff until it looks good. I stood next to her with my notebook, trying to be observant, but mostly just gabbing, and then occasionally jumping in with "Wait! I wasn't paying attention! How much of that did you add?"

Mindy's Potato Salad

7-8 medium potatoes, cooked, peeled, and cubed
7-8 hard boiled eggs, chopped
1 c. miracle whip
2-3 Tbs yellow mustard
1/4 cup milk
Lowry's seasoned salt to taste
fresh ground pepper to taste

optional-

chopped celery, pickles, onions, bell peppers, or crumbled bacon, or any combination of the above.
