Quick and Easy Beef Stroganoff


This is just another one of our family favorite standard faire meals we prepare pretty regularly. Zach loves it, and anything he will actually eat gets repeated pretty regularly around here. My other kids come running, and the smell of the onions and garlic and rosemary cooking has my kids running to the kitchen. You can also serve it over egg noodles, which we never have because I never have them on hand because I forget to buy them, but mostly I am afraid Zach will flip out and I will end up making rice anyway.

This recipe comes from my mother and the recipe that she gave me when I was first married states that she got it from her sister, Janis.

Quick and Easy Beef Stroganoff
1 lb. ground beef
1/2 c. chopped onion
1 clove garlic, crushed
2 Tbl. butter
2 Tbl. flour
1/2 tsp salt
1/8 tsp pepper
1/8 tsp rosemary
2 Tbl. fresh parsley, minced or 2 tsp dried parsley flakes
1 can cream of mushroom soup
1 cup sour cream
4-6 servings prepared rice

Saute ground beef, onion and garlic in butter (the way my mom taught me to do it would be to brown the hamburger with the onions and garlic, drain the hamburger grease, then add the butter.) Add flour and seasonings. Cook 5 min. Add soup. Simmr 10 minutes. Stir in sour cream. Heat, but do not boil. Serve on hot rice (or egg noodles).
